Summer cocktails




Nothing screams summer more than a refreshingly long
cool cocktail. Relaxing by the pool with the water reflecting off your fruit

brings you the pick of their top summer cocktails and how to re-create them for
decadent poolside posing.
For those of you in less than sun-blessed areas, take
a sip to be transported to tropical beaches and white sandy shores – take a few more sips and
you just won’t care!
The Bikini Martini

Vivid blue and thirst-quenchingly delicious enjoy in the sunshine accompanied by your bikini and a smile.
- 3 oz Bombay Sapphire gin
- squeeze of fresh lime juice
- 2 tbsp Blue Curacoa
- 1 tbsp peach schnapps
- 1 tsp confectioners' sugar
Garnish: lemon zest

Fill a martini glass with ice and water to chill it. Half-fill a cocktail shaker with ice, add the gin, lime juice, Curacao, schnapps and sugar. Shake well for at least 30 seconds.
Pour ice and water from martini glass,pour in the mixture through
a strainer. Top with a curl lemon zest.
Sex on the Beach

A classic summer favourite with a fruity, tropical taste and colour to match.
- 1 oz Vodka
- 3/4 oz Peach Schnapps
- Cranberry Juice
- Grapefruit Juice
Garnish: Cocktail cherry
Highball glass
Add the vodka and peach schnapps to a highball glass.
Fill with equal measures of cranberry juice and grapefruit juice, stir.
Top with cocktail cherry and straw, enjoy.
Watermelon Margarita

The grown up way to enjoy a refreshing watermelon on the beach.
- 2 teaspoons sugar
- 1 lime wedge
- 3 1/2 cups cubed seeded watermelon
- 1/2 cup tequila
- 3 tablespoons sugar
- 3 tablespoons fresh lime juice
- 1 tablespoon triple sec (orange-flavored liqueur)
Garnish: Lime wedges (optional)
Martini Glass
Place 2 teaspoons sugar in a saucer. Rub rims of 6 glasses with 1 lime wedge; spin rim of each glass in sugar to coat. Set prepared glasses aside. Combine watermelon, tequila, sugar, lime and triple sec in a blender; whiz until smooth. Fill each prepared glass with 1/2 cup crushed ice. Add 1/2 cup margarita to each glass. Garnish each glass with a lime wedge, if desired. Serve immediately
Banana Daiquiri

Innocent and sweet with an unexpected kick.
- 1 1/2 oz dark rum
- 1/3 of a banana
- Juice from 1/2 lime
- One can of ginger ale
- A splash of soda
Garnish: Lime
Goblet
Combine the rum, banana, lime juice and ginger ale in a blender with two or
three ice cubes. Blend until the ice cubes stop clunking. Pour into a goblet
filled with ice.
Add a splash of soda. Garnish with a wedge of lime.
Blue Hawaiian

- 1 oz Light Rum
- 1 oz Blue Curacao
- 2 oz Pineapple Juice
- 1 oz Cream of Coconut
- 1 cup ice
Garnish: Cherry, Pineapple
Highball Glass
Mix all the ingredients in a blender at high speed. Strain into a highball glass and garnish with slice of pineapple and a cherry
Seabreeze

As cool and dry as it’s name suggests.
- 2 oz vodka
- 5 oz cranberry juice
- 1 1/2 oz of fresh-squeezed grapefruit juice
- One can of ginger beer
- Soda
Garnish: lime
Highball Glass
Shake all of the ingredients, except the soda, with ice. Pour into a highball glass. Add soda to taste and garnish with a wedge of lime.
Malibu Sparkler

Adds a touch of sparkle and sophistication wherever it goes.
- 1 oz. Malibu Rum
- 1 oz. Ruby red grapefruit juice
- Dash of grenadine syrup
- Chilled Champagne
Garnish: Strawberry
Martini Glass
Shake Malibu, grapefruit juice and grenadine with ice. Strain into glass and top up with champagne. Garnish with a strawberry slice on the rim
Long Beach Ice Tea

A West Coast twist on an Eastern Coast Classic.
- 1/2 oz. Vodka
- 1/2 oz. Gin
- 1/2 oz. Rum
- 1/2 oz. Tequila (optional)
- 1/2 oz. Triple Sec
- 1/2 oz. Sweet & Sour
- 1 oz. Cranberry Juice
- Lemonade
Garnish: Lemon
Collins Glass
Pour all ingredients into a Collins Glass with Ice. Fill glass to the top with lemonade and garnish with a lemon twist.
Tropical Itch

A juicy, fruity tropical drink that hits the spot every time.
- 1oz. Vodka
- 1oz. Light Rum
- 1/2 oz. Orange Curacao or Grand Marnier
- 3 - 4 oz. Passion Fruit Juice
Collins Glass
Combine in a shaker with a cup of ice. Pour into a Collins glass. Top with additional passion fruit juice if needed.
