Asparagus Fest at Da Bruno italian Restaurants in Marbella – until 4th April

he can find among the mouthwatering and colourful  fruit and vegetable
stalls, then there is no doubting

Marbella Municipal Market at Midday

So the affable Signor Da Bruno, despite being the patriach
of the hugely successful Da Bruno restaurant group with a staff of dozens,
heads to the market himself to select the special raw ingredients for
the Asparagus Festival dishes headlining at the company’s five restaurants
throughout March and Easter week when Marbella will play host to
thousands of sun starved tourists and holidaymakers looking for
leisure and good food.

Laden with bunches of plump white asparagus, and plenty of
the slender, tender green variety too, Bruno heads back to the kitchens
of his flagship restaurant, Da Bruno Sul Mare, a grand but welcoming establishment
in a privileged spot on the Paseo Marítimo in the heart of Marbella.

The Art of Cooking Asparagus

In the bustling kitchen where things are heating up for lunch,
Bruno has donned his apron, and armed with a sharp vegetable peeler, he deftly
peels off the woody, outer layers of the fibrous vegetable, getting
to the plumper, fleshier parts of the white variety, and taking just a light
shaving off the thin, crisp green asparagus.

Bruno explains that far from humble, the asparagus is a regal
vegetable, and deserves to be treated with plenty of TLC, and lavished
with enough fine ingredients and skill to tease it into many different delicious
dishes and guises.

With the help of his talented kitchen staff, Bruno cooks up
a veritale feast of asparagus delights - white and green asparagus with
freshly-made Hollandaise sauce; Cream of Asparagus Soup, Asparagus with Scrambled
Egg, Asparagus Risotto…. just some of the Asparagus Specials featuring
on the seasonal menu right now at Da Bruno….

The Food of Love

Bruno and his wife Guiseppina, two of the most hard-working
and well-respected restaurateurs in Marbella, are the consummate hosts, and
are visibly thrilled when they see customers tucking in to their lovingly
prepared food. What is more, it’s as though you can taste that love and
attention – in the tradition of the best home-cooked food like mamma used
to make…

With plans to create televised cookery workshops and share more
of the the secrets of their superb recipes with those who love cooking,
there is no doubt that Bruno  will not be short of eager cookery
